In depth
Food is a perishable subject with a short peak, so the working method is to build and light the shot on a stand-in and swap the hero dish in at the last moment. Backlight and side light are strongly preferred because they show translucency, steam and texture, which frontal light flattens completely.
Examples in practice
A dish is lit and framed using a rehearsal plate, then replaced with the styled hero and shot within two minutes.
