Because raw files carry white balance as adjustable metadata, bracketing it is almost pointless for raw shooters and genuinely useful for anyone delivering JPEGs straight from camera. Cameras usually bracket along both the blue-amber and green-magenta axes, and the frames are generated from a single exposure rather than several shutter actuations.
